Successful reopening
"Everything turned out exactly the way we imagined it," says owner Marco Biancu enthusiastically about his newly renovated café "TimeOut" in Balingen. In May of 2011 the master pastry-chef took over the operation, which had been established by his great-grandparents, from his mother.
Meticulous planning
In collaboration with AICHINGER consultant Lars Düde an entire year was spent fine-tuning the conception and planning, whereby assortment focal points were taken into particular consideration and work flow was optimized - every detail had to be just right. After that everything went very quickly: within the space of just three weeks all of the rooms were gutted, renovated, and the new furnishings installed. All that remains are the delicious cake and pastry specialties that are presented in an atmospheric ambience: "In the counter area we installed a continuous granite counter top. In combination with the oak wood the ambience feels elegant and at the same time reflects the warmth of a committed family operation," according to AICHINGER consultant Lars Düde. Cakes and other pastry are presented in the ARTline counter, which is free of stanchions. While breakfast is offered in a buffet format, at noon the changing menus of the day are served - thanks to the optimized walking paths - directly to the guests where they are seated. In the evening it is time for "Wine & Dine": the guests relax in a lounge-like atmosphere with select wines and light Italian dishes.
Tight schedule
"The timing of the renovation was very tight, but thanks to the committed dedication of all concerned we were able to finish all of the work on time and open punctually at Whitsuntide." Since then Biancu has been overwhelmed by the response of Balinger's inhabitants. "The feedback has been nothing but positive and sales have far exceeded what we expected," according to Biancu. "And that means the sleepless nights were all worth it."
