Zunftstube, Neu-Ulm
Unrivalled combination of old and new in perfect harmony.
The Neu-Ulm based gastronomes Ralf and Petra Geydan-Gnamm and the AICHINGER representative Uwe Dörner look back on a cooperation of more than 12 years. Over these years several gastronomical projects were implemented ? and of course every time some part of gastronomical history of the town Ulm was written.
The last project implemented together opened up on August 5, 2008. It has been existing since many years already under the name "Zunftstube". The owners actually wanted the gastronomical profile to change to the new, more health-conscious consumer groups.
Where once upon a time solid home-style cooking, hearty meat dishes and spicy regional specialities in historical rooms and in a traditional ambiance were offered the culinary choice changed tremendously. To the owners it was very important to offer meals that are lighter, more stimulating, trendier and more health-conscious. The new range focussed on salad, soups, delicatessen and mediterranean food.
Within two weeks only the "new Zunftstube" was refurbished and the reopening could be celebrated. The new concept including state-of-the-art counter technology, new furnishing and trendy interior design however was possible within this short time only due to the consistent planning of the different crafts by the AICHINGER team.
The specific challenge with regard to this project was to tie in with the long tradition of the location and to match the "good old times" with the new, innovative and appealing elements. Thus old and new were combined in a unique way and fit to a consistent and attractive whole. The specific clou: The old wood carvings and the lead glazed windows were integrated into the newly furnished room. The room with its 40 seats was furnished completely new including benches, chairs and bar stools in dark leather. Moreover the we-shoplight experts for light design put innovative trendy accents to the rooms.
The most important highlight however is the centre part of the restaurant styled in an elegant way. A transparent counter section was placed in the formerly rustic ambiance with handmade engravings, bull's eye panes and heavy wooden furniture. The glass structure of the large counter line opens the space and is an adequate presentation surrounding for the new light and refined food selection. The counter?s materials and colouring are deliberately restrained in order not to have an overkill with regard to the genuine design elements. Principally old and new was brought together in perfect stylish harmony.
Once the refurbishment being finished Ralf and Petra Geydan-Gnamm were enthusiastic about "how unrivalled AICHINGER succeeded in fusing the existent traditional elements and the new equipment. All the guests are very positive about the location. "
